JY001 - Czech Lager I

JY001 is a beautiful strain from a small Czech microbrewery isolated by Jasper Yeast. A very smooth flavor with a touch of maltiness, this yeast will bring out the best in your refreshing lager! Aromatics produced complement hoppy pilsners perfectly while also letting the malt shine. A slow starting strain but one that keeps on chugging until the job is done. Can be used at higher temperatures without problems, lagering cold when fermentation is complete for a minimum of 3 weeks is advised. Flocculates very hard, resulting in a dense yeast cake - plan ahead when you intend to repitch.

JY112 - Czech Lager II

Our other Czech Lager, used by the brewery in the town where it all began a few hundred years ago. A nice malty and clean aroma and flavor, with good body. The strain produces beer that is very clean, neutral and easy drinking. A little less flocculant than JY001.

JY153 - Mexican Lager

Neutral lager yeast, great for light adjunct beers and clean and easy drinking lagers. Although attenuation can be on the lower side, perceived as crisp and refreshing. Maltiness is on the forefront but never offensive. Great lager yeast for a diverse set of beer styles, especially the lighter and more amber colored lagers.

JY174 - Andechser

Rumored to originate from the renowned Andechs Monastery Brewery in Bavaria. JY174 is a classic bottom-fermenting lager yeast that delivers a clean, crisp fermentation with a rich, malt-forward profile. This strain produces minimal esters and sulfur, allowing the malt character to shine through with a balanced, smooth finish. Ideal for traditional German lagers. This strain does not like excessive pressure, so be mindful when you spund your fermentation (only when cooling and keep an eye on the pH).

JY218 - Augustiner

Another clean lager strain, widely used for hoppier Czech and German-style Pilsners. A great choice for a helles lager as well. More pronounced yeast esters when fermenting at warmer temperatures, more outspoken lager character than other strains.

JY219 - Bohemian Lager

Clean, with a nice balance between fruity and malty. Arguably the most used lager yeast in the world. JY219 can ferment a wide range of temperatures but likes to be in the low to high 50ies F (10-16C). Produces easy drinkable lagers, especially kellerbiers. Can also be used for Steam beers (60-70F)

JY221 - Munich Lager

A robust lager strain with good attenuation. Perfect for somewhat drier pilsners and crisp Marzen/festbiers. Lower sulfur production even at the lower temperature range. Great yeast also for Italian pilsners and more hop-forward lagers.

JY234 - Common

Our common strain is great at regular lager temperatures, but at elevated temperatures it is especially suited for California and Kentucky Common ("Steam") styles. Gives the beer the nutty, pleasant flavor so common in common.

JY258 - High Pressure Lager

Ideal for fermenting lager beer in one week. Set fermentation temperature to 62-68°F (17-20°C) and maintain pressure between 6-15PSI with your spunding valve until terminal gravity is reached, often in under seven days. Cool finished beer and lager for 5-7 days. This yeast creates a quality lager while reducing fermenter tank time. Head pressure during primary fermentation reduces ester production, creating a clean lager brewed at much faster traditional ale fermentation temperatures.

JY267 - Swiss

Speculated to originate in a famous brewery in Switzerland, JY267 is a lager yeast that embodies precision and versatility. This strain delivers crisp, clean beers with a neutral backbone, letting your malt and hops take center stage. It’s the perfect choice for Swiss and Italian-style pilsners, and other delicate hop-forward beers. At cooler temperatures, JY267 unveils subtle herbal and floral undertones. Flocculates well.

JY268 - Franconian Lager

This is the most recent addition to our extensive lager strain collection, and we love it. A balanced, clean strain, it is perfect for bohemian pilsners, classic marzens, or a seasonal doppelbock. Similar to JY219 but with slightly higher attenuation and very low sulfur production. Franconian Lager was popular in Europe during the 1950’s and infrequently used until a recent discovery from a forgotten stock in a German lab.

JY272 - Bavarian Cloister

This Saccharomyces pastorianus strain, originating from a legendary monastery in Bavaria, ferments beers clean and robust.  Lagers tend to have a bready, creamy character.  Ester and sulfur levels are low when fermented within the temperature parameters.  Robust attenuation and alcohol tolerance suits everything from golden Helles to robust Bocks.

JY273 - Aying

Rumored to originate from Aying, where malt is king. Great for heavier, darker malt-driven lagers.  Producing minimal esters and sulfur, it lets robust malts take center stage. This yeast benefits from a good diacetyl rest.

JY278 - Philly Lager

This strain is a time capsule of pre-Prohibition craftsmanship, delivering a clean, malty backbone with a touch of rustic charm. Expect a smooth, approachable finish with delicate fruit esters—think apple and pear—layered over a subtle bready malt character. It’s the yeast for reviving classic American lagers, cream ales, or even a bold steam beer with Philly swagger.

Workhorse yeast that thrives under pressure, perfect for brewers who want reliability without fuss. Flocculates well.

JY284 - Belgian Lager

JY284 - Belgian Lager is your go-to strain for brewing clean, Belgian-style lager. Sourced from a traditional lager brewery from Belgium. It’s the perfect pick for classic lagers—think golden pilsners or light, refreshing blondes—where purity and drinkability reign supreme, with a touch of malt-sweetness. JY284 attenuates beautifully and settles out with a medium flocculation.

JY285 - Smoked Lager

A strain that originates from Bamberg from a very famous brewery brewing lagers with smoked malts. This strain leaves more body and attenuates less well compared to other lager yeasts, leaving room for the typical smoke character coming from the malt in smoked malt based lagers.

JY305 - Berlin Lager

Berlin Lager is a solid yeast for clean, malt-focused lagers. It delivers a soft malt flavor with a hint of esters, making it a good fit for Pilsners, Bocks, Oktoberfests, and darker styles. You’ll get subtle fruit notes—think pear—without losing a crisp lager finish.

Flocculates well and fast. Can attenuate quite well when mashed appropriately.

JY328 - Eifel Lager

JY328 is a reliable lager yeast strain. Suited for pilsners and other crisp lagers, delivering a clean fermentation that allows malt sweetness and hop bitterness to shine. JY328 exhibits minimal ester formation, contributing a neutral profile with subtle grainy notes, and ferments rapidly with a short lag time, even at cooler temperatures. Its reliable attenuation ensures a dry, refreshing finish, perfect for American Lagers, Pilsners, and Vienna Lagers. With medium-low flocculation, JY328 produces a slightly hazy beer that clears beautifully with a recommended diacetyl rest (~60-65°F for 2-3 days) and extended lagering at 33-35°F.  This strain does not like high Plato worts and does not handle high alcohol content.

JY330 - Dutch Lager

A historic Dutch lager strain. Smooth, finishing with a hint of perceived malt sweetness. Flocculates well. Sturdy yeast, can handle stress.

JY337 - Urs Lager

Very flocculant lager strain originating from a small microbrewery in Germany. Slow but steady in fermentation. Dropping bright, and attenuating well. The strain produces a touch of sweetness without being cloying. Its all yeast character. Very well suited for hop-flavor forward lagers and light lagers that benefit from a touch of sweetness (think Asian-style lager). Flocculates well. 

This strain displays some thiolizing activity that comes through when precursors are present, but do not worry: this strain is not genetically modified and the effect is subtle (so no overly sulfurous nose and taste!).

JY345 - Minnesota Lager

Historic Tuborg-lineage American lager yeast. More expressive than its other counterparts. Great for old-stock pre-prohibition lager beer. Great ester character that is in balance with malt flavor and overall character. Superb for light-lager, cream ale, and other typical American style lagers.
