Autolactic is a yeast strain that is naturally able to acidify and ferment wort. It is a little slower to ferment than other yeast strains. Isolated by Jasper Yeast, this strain will produce complement acidity with its fruity character. Reaches a pH of 3.0-3.5 depending on the circumstances. Oxygenate well, and start/finish warm. The yeast can attenuate without copitching, but it can stall if the temperature stays below 80 during fermentation.
