JY010 - Spirit Saison

Historic origins are the Belgian Ardennes. JY010 is full of character. Can create a creamy orange/citrus character when pushed to the higher temperatures of fermentation. Great yeast for an intense Belgian-style Saison or Farmhouse ale. STA-1 positive.

JY014 - The Pont

Ferments your beer bone-dry and creates effervescent and sparkling beers with a nice spicy and tart finish. Can produce bubblegum aromas. Arguably the most popular saison yeast. Note: This yeast can be a tricky fermenter that needs some help getting through the wort, especially at lower temperatures and higher gravities. Traditionally, these beers were allowed months to slowly ferment and mature, after primary in shallow fermenters. Keeping the gravity within reason and raising the temperature during fermentation (free rise without inhibitory cooling) helps to ensure completion of fermentation. Good aeration to stimulate diastatic activity, and the addition of a small amount of a neutral strain can also help and will not change the character of the beer. Strain is STA-1 positive.

JY056 - Poperinge Saison

Strong and robust fermenter, that attenuates your beer in record time. Produces lime and lemon-like aromas with a light white pepper and spice notes. Good saison yeast that can be blended in finicky saisons and farmhouse ales. Workhorse. This strain is STA-1 positive.

JY064 - Wevelgem

JY064 is a dynamic Belgian ale yeast strain. This strain is tailored for brewers aiming to capture a bold interplay of spicy phenolics and nuanced fruit esters, balanced with a robust hop character.  JY064 delivers vibrant peppery notes making it ideal for Saisons, Belgian Pale Ales, and hop-forward specialties. Its fermentation profile is robust, performing consistently across a wide temperature range, with cooler fermentations emphasizing spice and warmer ones enhancing fruitiness. With moderate flocculation and high attenuation, JY064 produces a crisp, dry beer with a refined clarity, perfect for both traditional Belgian styles and innovative brews that demand a touch of Belgian flair. Diastatic.

JY102 - DC Saison

Isolated from an beer barrel found during an archaeological dig in Washington DC. Phenomenal blend of flowery and fruity esters. An American yeast like no other. Be careful with high gravity worts - like most Saison-counterparts, does not do well in big beers. Tests positive for the STA-1 gene.

JY169 - Whippoorwhill Saison

A legendary saison yeast, originating from the famous Whippoorwhill Hop farm in Virginia. A perfect balance of phenolic rustic character and bright esters.  Does not do well with high gravity worts, like other saison strains. Earthy notes blend well with potential dry hop. Diastatic.

JY188 - Cadeaux

JY188 Cadeaux is a gift to brewers looking for classic saison yeast. Sourced from a rustic brewery in Wallonia, this strain produces  peppery spice, zesty citrus, and subtle tartness, with a note of bubblegum esters. Its high attenuation will result in bone-dry beers, while moderate flocculation ensures a touch of haze for that authentic farmhouse charm. A sister strain compared with JY014, Cadeaux is more suited for higher gravity Belgian farmhouse/saison styles. Note that fermentation can take time to complete. Diastatic.

JY231 - Frontiere Saison

Frontiere Saison is rumored to come from a famous brewery in Blaugies, Belgium. It produces spicy clove, earthy funk, and a touch of tart fruit, with a dry, peppery finish. Pitch it warm to bring out bubblegum and juicy notes—perfect for classic saisons or funky farmhouse beers. This yeast does well with heat and delivers big flavor for traditional or experimental brews. Diastatic.

JY315 - Limerick

This American saison yeast produces an interesting combination of vinous aromas with lemon/lime-peel taste, finishing crisp.  Flocculation is very low/slow, resulting in a naturally hazy beer, that can be resolved with finings. Great strain for fruit incorporation. Reliable fermenter. Strongly diastatic. This strain likes lots of oxygen during cast-out.

A new strain in our portfolio, a saison yeast without the diastatic activity feared by some brewers. Still has a high attenuation, and produces a nice spicy and estery character, especially at the higher temperature range.
