JY338 is a versatile American ale yeast, famous for its use in brewpubs in the 90ies and 2000s. This strain is a brewer’s all-purpose tool, ideal for a wide array of styles from hoppy IPAs to robust stouts. JY338 delivers a distinctive, full-bodied mouthfeel that amplifies malt richness, caramel depth, or fruity hop notes without leaving residual sweetness or under-attenuation. Its clean fermentation profile produces subtle esters. With low flocculation, JY338 yields a slightly hazy beer that may require fining or extended cold conditioning for clarity, making it perfect for American Amber Ales, Pale Ales, and malt-forward Porters. The strain can be a slow starter on generation one, but some extra oxygen will do the trick.
