JY272 - Bavarian Cloister

This Saccharomyces pastorianus strain, originating from a legendary monastery in Bavaria, ferments beers clean and robust.  Lagers tend to have a bready, creamy character.  Ester and sulfur levels are low when fermented within the temperature parameters.  Robust attenuation and alcohol tolerance suits everything from golden Helles to robust Bocks.
